Since Pinterest drives me crazy about blueberry pancakes on a daily basis, I wanted to make them myself for a while now – which is exactly what I did last weekend. No better day than a Sunday to whip up some yummy treats in the kitchen in your pajamas, right? (which is also the reason why you’re not seeing any of us in the pictures) I looked for a recipe and quickly stumbled upon one that added bananas in the mix. My food photography may need some work, but the pancakes turned out just fine for my first time! Here’s how you make them.
Ingredients: 1 cup of flour // 1 tbsp. baking powder // 1 tsp. cinnamon // 1 cup of milk // 1 egg (whipped) // 1 banana (mashed) // 600 gr. of blueberries (or as many as you like)
Prepping the pancakes: Combine all dry ingredients in one bowl. Combine the wet ones in another and add those two together. Stir in the blueberries. Make the pancake! Yes, it really is that easy. Takes about 5 minutes to prep, and if everything went right, your batter should be the perfect amount of thick so it will easily take the form you like. This batch is good for about 3 people. Add some extra banana slices or blueberries and – of course – maple syrup for that sweet, sweet taste. Enjoy!
